This is a fusion of old school British (my Dad loved sardines on hot buttered toast) and my own Mediterranean twist, adding home made Pesto and Sun-dried tomatoes. The combination of flavours marry together to provide a healthy and nutritious breakfast or light snack. The dish is super quick to put together, tastes awesome and is very healthy on your pocket too.

Ingredients
  • 2 slices White bread sliced 0.11)
  • 20 grams Green pesto 0.40)
  • 1 Can Sardines 0.50)
  • 30 grams Sundried tomatoes 0.14)

Cook Time: 5 minutes
  1. Toast your bread on one side then remove from the grill.
  2. Spread some pesto on each slice. Dice about 3 sun-dried tomatoes and sprinkle on top.
  3. Mash up the sardines then spread on top of the pesto and sun-dried tomatoes.
  4. Return to the grill until nicely toasted. Then remove, plate up and tuck in.
