You learn something every day, and todays lesson was why haven’t I made this before. I’ve really been missing something, because it is excellent and there are so many things going on. The flavour of the Sundried tomatoes gives the pesto an zesty tang, before the garlic and chilli give a combination of flavours, leaving you desperate for more. This can be used with pasta, spread on your toast, and tastes great with Fried squid – or just eat from the jar, it’s that good.

Ingredients
  • 1 cloves garlic chopped 0.03)
  • 25 grams pine kernels toasted 0.69)
  • 80 grams Sundried tomatoes 0.37)
  • 15 grams Fresh parsley 0.30)
  • 125 ml olive oil or oil out of SDT jar 0.63)
  • 25 grams Parmesan cheese 0.50)
  • 3 grams Black pepper 0.10)

  1. Throw all the ingredients in a food processor and blitz it. I used some of the oil from the sundried tomatoes, it seems to work.
  2. Serve with risotto, pasta or just spread it on sandwiches. Depending on what you use it for, the recipe should provide 12 good sized dollops.
