This is an essential recipe if you are cooking Mexican food. I have used pinto beans here, but nearly any tin of beans will do, as what makes the dish is the spices and other ingredients you add to it. Everything can be put together quickly and either added to burritos or used as an accompaniment to Fajitas or Avocada and poached egg which makes a very satisfying breakfast to set you up for the day.

Ingredients
  • 1 whole Onion diced 0.13)
  • 2 cloves garlic peeled & diced  0.06)
  • 1 tin pinto beans 0.50)
  • .5 whole Lime 0.15)
  • 13 ml Vegetable oil tablespoon 0.02)
  • 5 grams Cumin teaspoon 0.11)
  • 5 grams Paprika teaspoon 0.08)
  • 2 grams Salt 1/2 teaspoon 0.00)
  • 2 grams chilli powder 1/2 teaspoon ground 0.02)
  • 10 grams Fresh coriander chopped 0.20)

  1. Heat the oil in a frying pan then add the onions and sweat for 2 minutes before adding the chopped garlic and gently cooking for a further couple of minutes.
  2. Add the drained beans, mixing everything together and heating through.
  3. Toss in the cumin, paprika, salt & chilli folding the spices into the beans then mash everything together.
  4. Once you have a peanut butter consistency, remove from the pan.
  5. Dress with a wedge of lime, chopped coriander and a grating of cheese if it takes your fancy, then serve.
