There are many different recipes for meatballs and this one works great with pork mince with all the added spices. I tend to throw everything into a food processor and let that do the work moulding the meatballs together once the ingredients have been mixed. There are lots of subtle hints of flavour that come out in this dish such as the ground fennel and the back hit of chilli and this can be superb party food if you’ve got guests for dinner. As a side it’s a great addition if you are doing Tapas or a selection of spreads.

  1. Heat the butter & oil in a frying pan and add the chopping onion, sweating down for a few minutes until they are soft then set aside.
  2. In a food processor add all the remaining ingredients for the meatballs including the cooked onions. Give it a zap but not to much as it's always nice to have a bit of texture in your meat balls
  3. There should be enough mixture to make 12 medium sized meat balls so roll out accordingly. Then refrigerate for at least an hour.
  4. Make the tomato sauce. Heat the oil, fry the onions, add the tomatoes, garlic, tomato puree, balsamic vinegar bringing everything together in a consistent sauce. Season with salt & pepper and dress with fresh basil and simmer on a low heat.
  5. Cook the meatballs in a frying pan, browning all over for about 10 minutes. If there is to much fat from the mince drain it. Once the meatballs are cooked add to the tomato sauce.
  6. Serve with pasta, rice or potato wedges and enjoy.
