I know these are indulgent and full of calories, but we’ve all got to live a little.They can be knocked up in about 20 minutes but need to be nicely cooled before eating. It’s up to you as to what chocolate you use, either dark or milk and the chilli is optional. I think it just helps to counter the sweetness and gives a nice kick at the end, while the lime zest gives a little zing. As a pointer we picked up the Vanilla extract in Mexico at the airport. It seems to be a lot cheaper abroad, but only if you are travelling obviously.

  • 150 grams Butter
  • 200 grams chocolate
  • 250 grams Biscuit base
  • 200 grams Brown sugar soft
  • 300 grams Peanut butter
  • 5 ml Vanilla extract teaspoon
  • 5 grams chilli powder teaspoon
  • 1 whole Lime zest of

  1. Melt the butter in a pan. Blitz the biscuits and sugar together in a food processor. Mix the biscuit & sugar combo into the butter. Then add the peanut butter, vanilla extract, chilli and lime zest to the mixture.
  2. Line an 8' square tin with greased proof paper and then add mixed ingredients, pressing it flat and even across the tin. Melt the chocolate and pour over the mixture, covering it evenly. Refrigerate for 2 hours, then cut into squares and tuck in with a cup of tea.
