The recipe is simple, takes no time to prepare and you’ll be kicking yourself that you never tried it before. It’s an excellent accompaniment with Chicken fajitas or Chilli con carne Just its vibrancy, colour and extra flavour alone makes this a winner every time.

Ingredients
  • 175 grams Long grain rice 1 cup
  • 1 whole Onion peeled & diced 0.13)
  • 2 cloves garlic peeled & diced 0.06)
  • .5 Tin Tomatoes or 2 fresh tomatoes 0.18)
  • 350 ml chicken stock 2 cups
  • 5 grams Fresh coriander chopped 0.10)
  • 5 grams Cumin teaspoon
  • Salt & Pepper for seasoning
  • 15 ml Vegetable oil tablespoon 0.02)

Cook Time: 12 minutes
  1. Heat the oil in a pan then add the chopped onions. Saute for 5 minutes before adding the rice, coating all over then introduce the stock, covering the rice. Toss in most of the tomatoes saving a few for garnish, with the garlic and cumin. Cover and cook for 12 minutes, until all the water has been absorbed. Fluff up the rice and garnish with remaining tomatoes, chopped coriander and lime wedges. Serve immediately.
