One of the joys of living the the sea in Devon is the abundance of fresh fish. Crab sandwiches are staple diet down here, but my favourite crustacean can manifest itself on the dinner table in many ways. Although this tart doesn’t come cheap (crab costs can spiral), however richness in flavour means it will serve 6 comfortably. Cheddar cheese and leeks or mild onions with a sprinkling of spices combined with the crab meat make a fantastic combination which can be served hot or cold.
