This is an excellent vegetarian dish which takes no time to cobble together and delivers big time on flavour. The combination of 3 cheeses including the Mascapone, gives the dish a luxurious sweetness which is complemented by the wilted spinnach and the fragrancy of the fresh basil. Double up on this when you cook this dish as it freezes well and is perfect for just heating up when you can’t be bothered to cook and just want to slob around on the sofa.
