Heat the oil in a pan then add the chopped onions. Saute for 5 minutes before adding the rice, coating all over then introduce the stock, covering the rice. Toss in most of the tomatoes saving a few for garnish, with the garlic and cumin. Cover and cook for 12 minutes, until all the water has been absorbed. Fluff up the rice and garnish with remaining tomatoes, chopped coriander and lime wedges. Serve immediately.
