Rissoles are just another name for a burger in reality. They can be eaten with any number of accompaniments. This recipe in an homage  of an old burger van, which for years used to be down on the Portobello Road. They used to serve these amazing, Chicken & parmesan burgers, with fried onions and a dollop of chilli sauce- they tasted amazing. Sadly as with most things in our society, the little guy got pushed out, and his van is long gone. However the taste memories remain strong and hopefully this offering would do them proud.

Ingredients
  • 1 cloves garlic minced 0.03)
  • 1 whole Onion peeled & chopped 0.13)
  • 200 grams chicken remains of roast or minced 1.40)
  • 1 whole Red Chilli chopped 0.20)
  • 10 grams Green pesto 0.20)
  • 20 grams Breadcrumbs 0.05)
  • 15 grams Parmesan cheese 0.30)
  • 5 grams Black pepper 0.16)

  1. This is so easy to put together. Prepare the ingredients as highlighted, then add them to a food processor and blend together.
  2. Make into 5/6 mini burgers and refrigerate for at least 2 hours.
  3. Fry on a high heat, turning every minute until the rissoles are nicely golden. Cooking time, should be about 10 ten minutes.
  4. Serve with chilli sauce in a toasted roll. Excellent gap filler.
