This is proper British fare and can be a side for any main dish or a meal on its own. Its quick to make and gets you one of your 5 a day with a bit of decadence thrown in. Try it also with leeks or carrots, it tastes just as good.
Chop the cauliflower and boil for 10 minutes until soft. Remove from pan and set aside.
Melt the butter and add the flour to make a roux, on a low heat.
Introduce the milk, stirring continuously, until you have a rich silky sauce.
Add the nutmeg and black pepper and then the cheese, incorporate everything together.
Toss in the cauliflower, wiggle it all about and pour the lot into a small baking dish. Sprinkle on the parmesan cheese, then brown until top starts to blister. Allow to cool then serve.
