I’ve always gone nuts about the Peking Duck version of this recipe but this makes a brilliant substitute using the leftovers from the Sunday roast and adding just a little oriental spice. The pancakes don’t seem to be stocked in many supermarkets but they can be put together quickly and taste so much better, knowing its your labours that have helped create them. Other than the simple preparation of a Julienne of spring onions and cucumber, that’s it aside of the rolling as it’s easier to buy the Hoysin sauce prepared.
