I’m always looking for ways to finish of the remains of a Roast chicken and the combination of some selected pieces of leg and breast mixed with home made Pesto makes a classic combination. Combined with some ciabatta, lambs leaf lettuce, red onions and a rasher of bacon, this becomes an excellent late breakfast or early lunch. It’s even better with some homemade soup to wash it all down.

  • 100 grams chicken shredded 0.70)
  • 50 grams Green pesto 1.00)
  • 25 grams Bacon 1 rasher 0.17)
  • 5 grams Lambs lettuce handful 0.08)
  • .5 whole Red onion 4 slices 0.05)

  1. Shred some of the roast chicken then mix with pesto sauce.
  2. Split the ciabatta and toast it. When ready start to layer your sandwich. When done eat immediately.
