Pigs of all our heavy duty farm animals produce the smallest carbon footprint, it is a meat I am very fond of. The tenderloin is excellent value with very little fat and marinating it in the other ingredients enhances its flavour even more. It’s good to have a kick of chilli so I’ve used a pepper sauce I picked up in Mexico, but any version will more or less do. This is quick to make and makes a very tasty meal.

Ingredients
  • 450 grams Pork tenderloin 3.21)
  • 4 whole Red Pepper deseeded  1.60)
  • 1 whole Onion peeled & diced 0.13)
  • 3 cloves garlic minced 0.09)
  • 15 grams Fresh coriander 0.30)
  • 5 grams Oregano teaspoon 0.04)
  • 5 grams Cumin teaspoon 0.11)
  • 1 whole Lime juice & zest of 0.30)
  • 5 ml Pepper sauce teaspoon 0.03)
  • 100 grams Cheddar Cheese 0.63)
  • 13 ml Soy sauce tablespoon 0.08)
  • 1 tin Kidney Beans 0.35)

  1. Make a marinade combining lime juice & zest, pepper sauce, soy sauce, garlic, coriander, oregano and cumin. Add the pork, mixing together. Refrigerate for at least 2 hours.
  2. Heat the vegetable oil and fry the onion until soft. Add the pork and brown on all sides. Thrown in the beans, remaining marinade and 50 ml of water. Cook for 2 minutes on medium heat then cool.
  3. Slice the head and stem of the peppers (any colour will do) and de-seed. Stuff the pepper with the pork mix and top with cheese.
  4. Bake at 180 degrees for 40 minutes Allow to cool, then serve.

    This sounds delicious.
    A couple of questions, though:
    – How small do you cut the pork? Mince, fine dice, large dice?
    – Do you cut the pork before you put it in the marinade or after browning?
    – When do you add the pepper sauce? When serving or do you put it in the marinade?
