Made this after liking the flavours in Pea & mint risotto with pesto. It’s really quick to make and tastes so fresh with the mint biting through. The added potato helps thicken the soup and its verdant green colour makes it an inviting prospect. Add a dollop of pesto if you want, they are a great combination.

Ingredients
  • 1 whole Onion 0.13)
  • 2 stick Celery 0.16)
  • 1 cloves garlic 0.03)
  • 3 stock cube Vegetable stock make 1000ml
  • 25 grams Butter 0.09)
  • 150 grams Potatoes small one, diced 0.11)
  • 15 grams Fresh Mint 0.35)
  • 300 grams Peas 0.41)

  1. Melt the butter and sweat the onion, celery and garlic for about 5 minutes.
  2. Add the vegetable stock, peas, potato and mint. Season with salt & pepper and simmer for 20 minutes
  3. Blitz in a food processor then serve.
