What with spring in the air my local market comes alive with a abundance of fruit and vegetables and fresh asparagus must be up there with the best of them. This simple recipe with its dressing is melt in the mouth stuff and works great with Roast Chicken. If you haven’t got a griddle then the grill or a frying pan will suffice.

Ingredients
  • 200 grams asparagus 1.50)
  • 13 ml olive oil tablespoon 0.07)
  • 5 ml Lemon teaspoon lemon juice
  • 5 ml Balsamic vinegar teaspoon 0.03)
  • 10 grams Parmesan cheese 2 teaspoons 0.20)
  • 5 grams Black pepper teaspoon 0.16)

  1. Brush the asparagus with a whisper of oil then chargrill on all sides. If you have not got a griddle then grilling or frying in a flat pan will suffice. Once cooked allow to cool.
  2. Mix the remaining ingredients together to make a dressing then pour over the asparagus and serve with Roast Chicken. The two work brilliantly together.
